Won Ton Soup

 This is my Dad's recipe, they really are the best won ton...

Won Ton ingredients:

2 packages of square won ton wrappers, thinner dough is better

200 gr. ground pork

1 egg

5-6 green onions (scallions), finely diced

5-6 button mushrooms, finely diced

200 gr. boiled, chopped spinach

1 tsp. grated ginger

2 garlic cloves, finely minced

chicken or vegetable broth

soy sauce

sesame oil

cooking sherry

Boil the spinach, drain and chop.

In a medium bowl, mix the ground pork, egg. green onions, mushrooms, ginger, garlic, and a dash of soy sauce and sesame oil.

Set a pot to boil with the broth and a dash of cooking sherry, sesame oil, and soy sauce.

Place a teaspoon of the filling onto the center of a flat, square wrapper and fold it into a triangle. Fold the wide, closed end of the triangle over and pinch the pointed ends together with a dab of water.

This is the most efficient way I have found to fold won ton. You can experiment with other ways to fold the filling inside the won ton, but make sure that they are well sealed and don't open when you boil them.

Drop the won ton in small batches into the boiling broth and cook for 2-3 minutes until the dough is cooked.

Serve the won ton with the broth in a large bowl.

You can also drain and remove the won ton from the broth and save or freeze them for reheating in broth later. It makes a great, instant snack!
