Another family recipe, this time from my mother-in-law who is French...Tarte à la Moutarde is basically a tomato, onion and cheese tart with a mustard zing.
Recipe:
1 piecrust (you can make your own but I generally buy mine pre-made)
7-8 medium sized tomatoes, sliced
4-5 medium sized onions, peeled and sliced (this is also very good with shallots)
2 tablespoons dijon mustard
2 handfuls of grated cheese to sprinkle on top, mozzarella or a mix of cheeses
olive oil
thyme, salt and pepper for seasoning
Preheat the oven to 180˙ C
Place the rolled out piecrust in a pie tin with some pie beads and bake until crisp
(~ 15 minutes)
In a saucepan with olive oil, sautée the onions over a medium heat until they begin to brown. Season them with salt, pepper and dried thyme.
Remove the onions and sautée the tomato slices on both sides in the same pan, with olive oil, salt, pepper and dried thyme.
Take the piecrust out of the oven, remove the pie beads, and spread a generous layer of mustard all over the surface.
Then arrange the onions in a layer over the crust and the tomatoes in another layer on top of the onions.
Sprinkle the grated cheese evenly over the top and put back in the oven.
Bake for 15 minutes or so until the cheese is nicely melted.
Serve warm on a beautiful plate.
