Mushroom Beef Burgers

My kids love hamburgers, they would eat them every day! Since I think this is unhealthy and unsustainable for the planet, I tried something they've implemented at Stanford University -- mixing diced mushrooms into the beef to extend the meat. It worked astonishingly well; everybody in our family LOVED the burgers, that is until Max found out that they contained mushrooms... Even though I am married to a man who grows mushrooms for a living, my son won't let a mushroom cross his lips, (voluntarily).

Shroomburger Recipe: makes 4 burgers

250 g. ground beef

150 g. minced button mushrooms (I use my food processor to dice them really fine)

1 medium onion, finely diced

salt and pepper to season

4 buns (I love it when I can find the multi-grain ones in the photo)

tomato, lettuce, onion, mayo, mustard, ketchup and any other of your favorite garnishes

Mix the beef, mushrooms, onion, salt and pepper together well and form into 4 patties. Fry these in a little butter on both sides like a regular burger, you can add a slice of cheese on top if you like.

Cut the buns in half and toast both sides.

Spread condiments onto the inside of each bun.

Place the cooked patty on each bun and add sliced tomato, sliced onion, and lettuce. Place the top of the bun and serve.

Try not to smirk about the secret ingredient...

Yes, I continue to make these without discussing the mushroom component and they continue to be devoured with much gusto. Some day I will confess to Max,

but not yet!
