My mother also likes to go mushroom hunting, and for years she has been telling me about hen-of-the-woods, which it turns out is another name for maitake mushrooms, little did I know!

Maitake mushrooms grow in clusters, so the most important thing is to cut them apart into thin petal-like chips. Spread the chips out on a foil lined baking sheet and drizzle lightly with olive oil, then sprinkle with salt.
Preheat your oven to 200° C. If you have an upper grill, use this setting.
Bake the maitake for a few minutes until cooked and crispy, careful that they don't burn! Serve on an elegant plate with a glass of wine.
