Black Sesame Ice Cream

I'm crazy about sesame flavor and black sesame candies are one of my favorite treats. I recently came across several recipes for sesame ice cream and so I had to make some for myself!  I checked out several recipes, this one is derived from one I found on mysecondbreakfast.

Black sesame paste (buy in Asian grocery store or make your own)

1/2 cup black sesame seeds (lightly toasted)

1 tablespoon honey

Ice Cream

black sesame paste

1.5 cups milk

3/4 cup sugar

1/4 tsp. salt

4 egg yolks

1.5 cups whipping cream

1 tsp. vanilla extract

Over low heat toast the sesame seeds until they pop. Let them cool.

Grind the seeds in a food processor and add honey. This will make a sticky paste.

Heat at a low temperature the milk, sugar, sesame paste and salt. Stir until the sugar dissolves.

Whisk the egg yolks thoroughly and gradually add the warmed milk mixture to the eggs. Do this slowly so that the eggs do not curdle. Then stir slowly over low heat until the mixture thickens. Add this mixture to the cold cream and vanilla and mix well.

Put in the freezer or ice cream maker. I made mine without an ice cream maker but stirred the mixture a few times as it was freezing. Depending on how cold your freezer is, this will take 3-5 hours to freeze.

Serve with a black sesame stick candy.
