Avocado Ice Cream (Vegan!)

I'm not a vegan, but I am always interested in new avocado recipes! This ice cream is creamy and smooth, I wouldn't say it tastes strongly of avocados, but it is delicious and I love the colour too!

Ingredients:
2 avocados (peeled and pitted)
1 banana
1 can of coconut milk (14 oz.)
1 tablespoon lemon juice
1 tablespoon lime juice
4 mint leaves
2 1/2 tablespoons maple syrup

I adapted this recipe slightly from FeelGoodFoodie by changing a few proportions, mixing lime with lemon juice, and using my ice cream maker. The result is a creamy, minty-avocado-coconut-lime flavour that is fresh and enticing. Not being vegan, I'm used to making ice cream with dairy cream, but coconut milk is an excellent substitute that blends well with the other ingredients. The combined creaminess from the avocados, coconut milk and banana make this ice cream satisfying without feeling heavy.

To make this I simply blended everything up with a stick blender and poured the mixture into my ice cream maker. Half an hour later the ice cream was ready! Cooking is so easy with all these gadgets, but I do find it satisfying to discover and make new delicacies.
