Although I make a lot of pies and crumbles, I had never made Apple strudel before.
I had some in a café the other day and decided to give it a try. Many strudel recipes require pecans, which grow in the Southern USA and are somewhat uncommon in Spain. My recipe is quite simple and uses walnuts instead of pecans, though I will try it with pecans the next time I find some! The recipe I came up with combines elements from different strudels and is really easy to make if you buy the puff pastry sheets pre-made.
Apple Strudel Recipe: makes 2 strudels
Strudel

5-6 tart apples (like Granny Smith), peeled, cored, cut in thin slices

2 sheets of puff pastry

2 tbsp butter

1/3 cup brown sugar

1 teaspoon cinnamon

1 teaspoon orange zest

1 tablespoon lemon juice

1/4 cup chopped walnuts (or pecans!)
Icing
-
¾ cups powdered sugar

1 tbsp milk

¼ tsp vanilla extract

Melt butter over medium heat in a large pan.

Add the apple slices and cook until almost tender, 7-8 minutes.

Stir in the brown sugar, cinnamon, orange zest, lemon juice and walnuts until the sugar has dissolved.

Line a large cookie sheet with parchment paper.

Unfold the puff pastry onto the parchment paper and place half the filling in a strip along the center.

Fold the sides over the top and pinch the ends closed.

Repeat for the second strudel.

Bake for 25-30 minutes at 180ºC until golden brown.
Icing

Combine powdered sugar, milk, and vanilla in a small bowl and whisk together until completely blended.

Drizzle over the top of the warm strudel.
Serve with tea, and if you are feeling decadent, top the strudel with whipped cream!
